Chia, Choc Chip, Banana Muffins
You can enjoy these muffins in the car, in the house, at work, at school, in the morning, in the afternoon, whenever you please you can enjoy them!!
Ingredients:
- 1 x cup buckwheat flour
- 3 x tbsp ground flaxseeds
- 2 x tsp baking flour
- 2 x tsp cinnamon
- 4-3 x tbsp choc chips
- 2 x tbsp coconut sugar
- 1 x cup mashed banana
- 3/4 x cup almond milk
- 3 x tbsp chia seeds mixed with 9 tbsp of water to make into a gel
- 3 x tbsp coconut oil
Method:
- Preheat oven to 180 degrees celsius and prepare and grease muffin moulds.
- Mash the bananas with a fork & then add the wet ingredients (melted coconut oil, chia gel & almond milk) and stir together until combined.
- Add in the rest of the ingredients and mix well until all combined.
- Add mixture to muffin moulds and pop into the oven for 20-25 minutes until cooked.
- The texture will be moist & dense! This recipe will make 7-8 muffins and may vary depending on the size of your muffin tray.
NUTRITIONAL INFORMATION:
- Flaxseeds - contains the compound SDG (secoisolariciresinol diglycoside) and in conjunction with resveratrol (found in skin of red grapes & red wine) increases the production of sex hormone binding globulin (SHBG) in the liver, that binds with free floating oestrogen and therefore reduces the pool of oestrone (E1) & oestrodiol (E2 - the most bioactive form of oestrogen). SDG in conjunction with zinc inhibit the activity of the enzyme, aromatase that converts testosterone to oestrogen. Excess oestrogen can look like a number of symptoms such as, heavy periods, PMS, breast tenderness, endometriosis, gynecomastia (development of breast tissue and muffin top in men), so if you are suffering from any of these symptoms, booking in for a consultation may be of benefit for you!
- Buckwheat is a functional food that is apart of the polygonaceae family. It is a gluten free grain that is high in protein, contains all 9 essential amino acids (isoleucine, leucine, methionine, threonine, tryptophan, valine, histadine, phenylalanine, lysine - "essential" means the body can not make these amino acids and they have to be obtained from the diet), and is a low GI starchy carbohydrate and high in insoluble fibre, antioxidants such as rutin & quercetin that all initiate anti-inflammatory, antioxidant and anticarginogenic properties (Son & Ho,. 2005). Buckwheat has also been shown to reduce cholesterol, low density lipoproteins, and have a positive affect on reducing elevated plasma glucose levels (Giménez-Bastida & Zieinski,. (2015).
- Chia seeds are high in omega 3, fibre, antioxidants, calcium and iron. In this recipe, chia has been used to replace an egg to make it suitable for vegans & nutrient dense!
